I have been loving sweet potatoes and pomegranates and though that kale and a bit of goat cheese would make this a winner. This salad is one that even veggie haters will go gaga over. The flavors as SO good and pair well with basically anything.
The dressing is super fast and most of the ingredients I already had at my house from Christmas. So pack in your veggies and enjoy this nutrient dense lunch or dinner. You will fall in love and keep coming back to this recipe again and again.
